Oh, yum. I don't even like eggplant that much, but that looks fabulous! And they are such pretty fruits!

Pretty AND tasty!

Great reward for labour in the garden. My D doesn't cook up a storm like that. We use "jar sauce" when it's just the kids and me. We've had some pretty good surprises. Healthy eating is the perfect foil for exercize. Have you tried listening to a book tape while you tackle the machines?

I'm glad you're taking a break. You need to ease into working out just like you do with most things. Jumping in whole hog won't work as well as taking it slow.

Yum!

The smaller eggplants don't seem to have the bitterness issues that their larger cousins do.

Looks yummy

Wasn't Ragu a standard prize on some TV game show in the seventies? You know "There! You've won a whole year's supply of Ragu Spaghetti Sauce!")

Those look totally delicious. I want some.

Eggplant parm tapas! I could eat bucket sof those delicious looking morsels!

I just got one of those in my CSA box--what a great idea, making little Italian tapas out of it!

I'm not usually an eggplant fan but I have to say I really like the baby ones. Just don't tell my Grandma!
