Cuban Pork in the Crock-Pot!!! Success! Here's what I did:
-chopped one onion and put in the bottom of the crock pot
-Mixed (roughly) 1.5 Tablespoons Adobo Seasoning (no pepper, with the blue cap) with a lot of minced garlic (about 6 cloves or so)
-With the pork sirloin roast (2.08 pounds) made several deep slits (like stabs) in the roast
-Smeared the adobo/garlic mixture all over the roast and into the slits.
-Put the roast into the pot on top of the onions.
-Mixed one cup water with two Tablespoons white vinegar
-Poured the water/vinegar mixture into the pot along the sides so it didn't disturb the roast.
Put the cover on the crock-pot, set it to Low. Came back nine hours later and shredded the roast and discarded the cooking liquid/onion. The meat was very tender and the taste was delicious. We ate it with limes (for squeezing) and white rice. I think the left overs will be great in sandwiches or burritos.
I would have used a shoulder roast but the grocery didn't have any, so I used this sirloin roast as it was on sale. I think this recipe would be great for a cheap cut of pork due to the low heat/long cooking time.
I believe the proportions are flexible but I would not increase the amount of vinegar, even if you have a larger roast.

I made a barbecue version of this using a pork shoulder last week. It's a tasty quick dinner with lots of leftovers. A good reminder to get the crock pot out.

I make a similar rib roast with BBQ sauce. The instructions: Place roast and liquid in crock pot and head to beach for 6-8 hours.

This sounds really good. I think I'll do some looking into the adobo seasoning and see if I can make my own. I have a pork roast of some form or another in the freezer.
Ya think the kids will eat it? Maybe cut down the vinegar to 1 tablespoon???

Yum! Need to find a crock pot that doesn't spit at me from under the lid even on the lowest setting which seems to be "high" despite adjustments.
